We are a Slow Food Restaurant
Everything is made in house except the Brown Rice Tortillas & Daiya “Cheese”. Yes, even our vegan mayo that we use as the base for our fan favorite sauces Chipotle Aioli & Creamy Herbal.
That also includes all of our baked goods and raw desserts (except the occasionally stocked Medicine Balls made by Silvermoon Chocolates in Asheville, NC). Yes, that means we bake our own vegan gluten-free bread and make our own pizza dough. All in the tiny open kitchen you see when you order.
All of our ingredients are organic &/or non-GMO project verified, with as much local produce as possible, depending on the season. We source our maple syrup from Plummer’s Sugarhouse in Grafton, VT and locally roasted coffee from Ungrounded Coffee Roasters in Londonderry, VT.
We use only certified gluten-free flours, make our own flaxmeal, handcut our oven roasted fries, and the list goes on.
The only oils you’ll find in our kitchen are cold-pressed olive oil, cold-pressed coconut oil, toasted sesame oil (only used in our sesame ginger dressing), and grapeseed oil (only used for the vegan mayo). Many items on our menu are 100% oil-free!
Most of our menu is processed sugar free or even 100% sugar-free. A few recipes include maple syrup, like our Ancient Grain Baked Bread & Pizza Dough (to activate the yeast) and Maple Beet Balsamic Dressing. We never just add sugar to make things “taste better”.
While we don’t share our recipes (unless they’re already on our blog, cookbook, YouTube channel, etc.), we are very transparent with our ingredients and have a binder you can ask to read the ingredients in every menu item (not all soups & desserts are in this binder, as they rotate frequently ~ but you can always ask for those ingredients).
Over the years we’ve been accommodating a wide range of dietary restrictions and have many items that are garlic &/or allium free, oil-free, etc. Just ask!
